Does Herbal Tea Count as Water? Hydration, Caffeine, Iron and Fasting

Herbal tea almost certainly counts toward your fluids — but it also inhibits iron absorption by up to 84%. What the hydration trial really tested, and the timing fix that solves the iron problem.

If you drink several cups of herbal tea a day, you are really asking two things: does it count toward my fluids, and is it quietly doing anything else? The first has a reassuring answer with a caveat worth knowing. The second has a genuinely surprising one — herbal infusions inhibit iron absorption almost as strongly as black tea, and almost nobody mentions it.

The short answer

Yes, for practical purposes. Unsweetened herbal tea is water with plant compounds in it, and there is no good evidence it costs you more fluid than it delivers.

The two things worth knowing beyond that:

  • The direct trial evidence people cite is about tea from Camellia sinensis, not herbal infusions, and it tested only men.
  • Herbal teas do interfere with iron absorption, substantially — which is a timing problem, not a reason to stop.

Everything below is the detail behind those three sentences.

What the hydration trial actually tested (and who it tested it on)

The study that underpins almost every "tea hydrates you" article developed a beverage hydration index. Seventy-two euhydrated, fasted male subjects each drank 1 litre of still water or one of 13 other beverages over 30 minutes, and urine was collected for the next four hours.

Total urine over four hours after still water was 1,337 ± 330 g. Three drinks produced significantly less urine than water — an oral rehydration solution (1,038 ± 333 g, P < 0.001), full-fat milk (1,052 ± 267 g, P < 0.001) and skimmed milk (1,049 ± 334 g, P < 0.001). And this is the key sentence:

Cumulative urine output after cola, diet cola, hot tea, iced tea, coffee, lager, orange juice, sparkling water and a sports drink was not different from the response to water ingestion.

Two caveats the honest version has to state. The "hot tea" and "iced tea" here are Camellia sinensis, not herbal infusions — so this trial does not directly test chamomile or peppermint. And every participant was male, in a euhydrated, fasted state, drinking a litre in half an hour, which is not how anyone drinks tea.

What it does establish is that even caffeinated tea did not out-urinate plain water in that setting. Since the main theoretical reason a drink might dehydrate you is caffeine, and most herbal teas have none, the inference to herbal tea is reasonable — it is just an inference, not a measurement.

Does herbal tea make you urinate more?

You may well notice you go more often, and that is not a contradiction. Drinking a litre of anything produces urine. The question the research asks is a narrower one: does the drink cause you to lose more fluid than it supplied? For caffeinated tea, in the trial above, the answer was no.

For specific herbs marketed as diuretics, I could not find trial evidence quantifying a diuretic effect from an ordinary infusion in people, and I am not going to assert one. If a particular tea sends you to the bathroom more than water does, that is a real observation about you and worth acting on — just not evidence of dehydration.

What official guidance says — and what it pointedly does not say

The NHS states that in the Eatwell Guide, the government recommends aiming for 6 to 8 cups or glasses of fluid a day, and that "water, lower-fat milk and sugar-free drinks, including tea and coffee, all count as part of your daily intake" (NHS).

Read that carefully: it names tea and coffee, and it does not mention herbal tea at all. That absence is the most honest thing available. An unsweetened caffeine-free infusion is, by any reading, a sugar-free drink and falls inside the guidance — but nobody has written it down for you, and I would rather say so than pretend a citation exists.

Caffeine: the exceptions to "caffeine-free"

Most herbal teas contain no caffeine, because they are not made from the tea plant. Our herbal tea benefits guide and caffeine-free bedtime teas cover the definition and the bedtime implications, so here it is in two sentences plus the exceptions.

The exceptions are real and they hide in blends:

  • Yerba maté (Ilex paraguariensis) and guayusa (Ilex guayusa) are caffeine-containing plants — a 2019 phytochemical study describes them together as "the caffeine-rich plants guayusa and maté" (Food Research International, 2019), and an infusion study found guayusa contained more caffeine than the maté samples it was compared with (Antioxidants, 2024). I am deliberately not quoting a milligrams-per-cup figure: published amounts vary with preparation, and I did not find a per-serving value in USDA FoodData Central for either plant.
  • Blends containing green, black or white tea — "herbal" on the front of the box is a marketing word, not a regulated one. Check the ingredients.

If caffeine is the reason you switched, the ingredients panel is the only thing that answers the question.

The iron problem, and why it is a timing problem

This is the finding that should be better known than it is.

In a controlled study, iron absorption from a bread meal was measured in adults by erythrocyte incorporation of radio-iron, across a range of polyphenol-containing beverages. Beverages supplying 20–50 mg of total polyphenols per serving reduced iron absorption by 50–70%; those supplying 100–400 mg reduced it by 60–90%. Broken down by beverage:

At an identical polyphenol concentration, black tea was more inhibitory than chamomile, vervain, lime flower and pennyroyal — but equal to peppermint. Adding milk made little or no difference. The authors' conclusion is unambiguous: herb teas "can be potent inhibitors of Fe absorption" (Hurrell et al., 1999).

The original demonstration of the mechanism dates to 1975, which attributed the effect on non-haem iron to insoluble iron–tannate complexes (Disler et al., 1975). Note that this concerns non-haem iron — the form in plants, fortified cereals and iron tablets — not the haem iron in meat.

Who this actually matters for: anyone taking iron tablets, anyone with low ferritin or iron-deficiency anaemia, people who menstruate heavily, and people eating mostly or entirely plant-based. If none of that is you, this is interesting rather than urgent.

The fix is timing, not abstinence:

  1. Keep tea away from iron tablets and iron-rich meals — leave an hour or two either side. The NHS says of ferrous fumarate that some food and drink affect how the medicine works, naming tea, eggs and milk (NHS).
  2. Drink your tea between meals, which is when most people want it anyway.
  3. Pair iron with vitamin C rather than trying to out-drink the problem.
  4. Note that two teas the cluster already recommends are on that list — peppermint tea for digestion at 84% and chamomile tea for sleep at 47%. An after-dinner peppermint and a bedtime chamomile are both naturally away from an iron dose, which is convenient. A peppermint tea with your fortified breakfast cereal is not.

Does herbal tea break a fast?

Here is what I can and cannot support.

What is defensible: an unsweetened herbal infusion is essentially water with trace plant compounds. It contains no meaningful energy. On the definition of fasting that most intermittent-fasting protocols use — an absence of calorie intake — plain herbal tea does not break it. Adding honey, sugar or milk does.

What I cannot confirm: I could not find a clinical study testing whether unsweetened herbal tea affects the metabolic state that fasting is meant to produce. So the paragraph above is reasoning from a definition, not a trial result, and I would rather label it than dress it up.

Tannins, teeth and the small stuff

  • Staining. Deeply coloured infusions — hibiscus, rooibos, strongly brewed fruit blends — can stain in the same way any pigmented drink does. Rinsing with water after is the simple mitigation; brushing immediately after an acidic drink is not.
  • Acidity. Hibiscus and fruit-based teas are noticeably tart, which is worth knowing if you sip them all day and are prone to dental erosion or reflux. On reflux specifically, peppermint has its own catch — see peppermint tea for digestion.
  • Tannins. "Does herbal tea have tannins" is really the iron question above, wearing different words. The measured effect is in the table.

How much a day is reasonable

There is no established upper limit for herbal tea as a category, and any single number you see quoted is someone's estimate. What the site's herbal tea benefits guide says is the defensible position: two to three cups a day of a common culinary herb like chamomile, peppermint or ginger is fine for most people, and stronger medicinal herbs deserve more deliberation.

Three things genuinely scale with volume rather than being fixed:

  • Iron interference, which is about how much polyphenol arrives alongside iron.
  • Any pharmacologically active ingredient in a blend — licorice being the one that shows up in case reports at daily-habit volumes.
  • Anything you sweeten. Four sweetened cups is a sugar question, not a tea question.

Your next step: if you drink several cups a day and take iron, or are being treated for low iron, move the cups away from the tablet and the iron-rich meals. Frequently Asked Questions (FAQ)

Is herbal tea hydrating or dehydrating? Hydrating. The mechanism by which a drink could dehydrate you is diuresis, and in a controlled trial even caffeinated hot and iced tea produced no more urine than still water (Maughan 2016). Most herbal teas contain no caffeine at all.

Does herbal tea count as a clear liquid before a procedure? Follow the instructions your hospital gives you, not a general article. Pre-procedure fasting rules vary by procedure and institution, and the colour of a hibiscus infusion alone can matter for some tests.

Can I count herbal tea toward the 6 to 8 cups a day? The NHS guidance names water, lower-fat milk and sugar-free drinks including tea and coffee (NHS). An unsweetened herbal infusion fits that description, though the guidance does not name it explicitly.

Should I stop drinking herbal tea if I'm anaemic? Ask the clinician treating you — but the practical answer in the literature is separation rather than abstinence. The inhibition is measured at the point the polyphenols and the iron meet, so moving them apart in time is the intervention (Hurrell 1999).

Does herbal tea count toward "30 plants a week"? That target is about dietary fibre diversity from foods. A herbal infusion delivers plant compounds but almost no fibre, so counting it is generous. Nothing about that is a health claim either way.
